É assim

Depois de 5 semanas de chuva torrencial, seguidas, em Agosto, e de algumas semanas de algum Sol já em Setembro, parece que chegou o Verão.
Hoje antes de me por a trabalhar, foi com isto (e com alguns gritos do 'mái novo' ainda de madrugada) que comecei o meu dia. Com um passeio e mergulho logo às 9am.

Gluten Free Chocolate Almond Pound Cake


Este fim-de-semana fiz este bolo. Um bolo diferente do que estamos habituados a fazer, e foi com muitas reservas que me atirei a ele, com medo de estar a 'deitar comida ao lixo'. Quando acabei de o fazer e experimentei a 'massa' fiquei muuuuito desiludida... não sabia mesmo nada bem! Alias... tudo me sabia a azeite, o que para uma sobremesa não apetece muito. Depois foi ao forno... e o que saiu de lá.... yummmmmm deixou-nos todos a babar!

INGREDIENTES
  • 1/2 cup organic unsalted butter
  • 1/2 cup olive oil
  • 5 eggs, preferably organic and free-range
  • 2 cups ground almond flour
  • 3/4 cup organic cane sugar or sucanat (eu substitui por Penela - Evapurated cane juice)
  • 1/4 cup pure maple syrup
  • 2 teaspoons baking powder
  • 1/2 cup organic cocoa powder
  1. Preheat oven to 165ºC.
  2. Melt the butter in a pan over low heat. Transfer to a small bowl and mix in the olive oil. Use a little of this to grease your baking pan(s).
  3. Whisk eggs together with the sugar. Add the maple syrup and whisk again.
  4. In another bowl, sift together the flour, baking powder, and cacao powder. Add to the eggs/sugar/maple syrup and combine well with a wooden spoon. Add the melted butter/oil and mix well again.
  5. Pour the batter into the prepared pan and bake in the preheated oven for 40-50 minutes (eu deixei por 35minutos, e ficou mais molhado como gosto), or until a cake tester inserted in the center comes out clean/dry.
Acabámos por lhe acrescentar um bocadinho de natas por cima, e dezenas de morangos frescos! É um bolo rico e denso, e muito YUMMY. A repetir muito muito em breve!
